Sweetened Mascarpone, Berries & Honey Pizza

Ingredients

  • 1 × 10–12 oz pizza dough ball
  • 1 tbsp melted butter (for brushing crust)
  • 200 g mascarpone cheese
  • 30 g powdered sugar (or to taste)
  • 1 tsp vanilla extract
  • 150 g mixed berries (strawberries, raspberries, blueberries, blackberries)
  • 2 tbsp honey (plus extra for drizzle)
  • Fresh mint leaves (for garnish)
  • Optional: toasted almonds or pistachios for crunch

Method

  1. Preheat: Heat your Festa pizza oven to ~700 °F, or a conventional oven to 500 °F.
  2. Shape: Stretch the dough into a 10–12-inch circle on parchment paper. Brush the edges with melted butter.
  3. Par-bake: Bake the crust for 3–4 minutes until lightly puffed and set. Let cool slightly.
  4. Prepare Cream: In a bowl, mix mascarpone, powdered sugar, and vanilla until smooth and fluffy.
  5. Assemble: Spread the sweetened mascarpone over the cooled crust. Top with fresh berries.
  6. Finish: Drizzle generously with honey and garnish with mint leaves (and nuts if desired).
  7. Serve: Slice and serve immediately — best enjoyed slightly warm with the mascarpone gently melting into the crust.
Chef’s Tip: Add lemon zest to the mascarpone or a balsamic glaze drizzle over the berries for extra flavor depth.
